CARROT CUPCAKES 
1 c. brown sugar
2 eggs
2/3 c. oil
1 1/2 c. milk
2 1/2 c. wheat flour
1 c. white flour
4 tsp. baking powder
4 tsp. cinnamon
2 c. grated carrots
2/3 c. raisins
2/3 c. chopped nuts

Mix together sugar and eggs. Beat well. Add oil and milk. Mix again. Sift in flours, baking powder, and cinnamon. Mix. Add the grated carrots, nuts, and raisins and stir just enough to blend evenly. Pour into lined muffin tin and bake at 400 degrees for 20 minutes.
