PIEROGI CASSEROLE 
10-12 mashed potatoes
3/4 lb. grated Cheddar cheese
2 1/2 sticks butter
2 finely diced onions
1 lb. lasagne noodles
Salt to taste

Cook lasagne noodles according to directions. Mash the potatoes, add cheese and beat with mixer. Saute onions in butter. Add 1/3 of onion and butter mixture to potatoes and salt to taste. Generously butter a 9 x 12 inch baking dish. Place a layer of lasagne noodles in dish, then layer of potato mixture, repeat layers ending with noodles.
