LINDA'S PIEROGI CASSEROLE 
10-12 potatoes, mashed
2 onions, finely chopped
3/4 lb. cheddar cheese, grated
12 lasagna noodles, cooked
2 1/2 sticks butter

Add cheese to mashed potatoes and beat well. Saute onion in butter until soft. Add 1/3 onion mixture to potato mixture, salt and pepper to taste. Butter a 13 x 9 inch pan. Layer lasagna and potatoes until 3 layers are made, ending with lasagna. Pour remainder of butter and onions over top. Cover with foil and bake at 350 degrees for 20-25 minutes. May also be made with instant mashed potatoes. Serves 8-10.
