HONEY BANANA MUFFINS 
1 3/4 cups all-purpose flour
2 1/2 tsp. baking powder
3/4 tsp. salt
1/3 cup sugar
1 cup chopped almonds, divided
1 egg, beaten
3/4 cup mashed banana
1/2 cup milk
1/3 cup vegetable oil
1/4 cup honey
2 tbsp. melted butter

Combine flour, baking powder, salt, sugar and 2/3 cup almonds in a large bowl. Make a well in center of mixture. Combine egg, banana, milk and oil. Add to dry mixture, stirring just until moistened. Spoon batter into greased and floured muffin pans, filling 3/4 full.

Bake at 400°F for 15 minutes. Remove from pans immediately.

Combine honey and butter, mixing well. Dip top of muffin in honey mixture and sprinkle with remaining cup almonds.

Makes 12-14 muffins.
