TOFFEE PEANUTS

3/4 cup water
1/4 cup sugar
1/2 tsp. vanilla
1/4 tsp. salt
1 lb. bag raw Spanish peanuts

Boil the first four ingredients until sugar is dissolved, stirring constantly. Add the peanuts and continue to stir until all moisture is absorbed into the nuts and they look sugary. Spread the coated peanuts onto a greased or parchment-lined baking sheet in an even layer.

Bake at 300°F for 15 minutes, then stir the peanuts and return them to the oven for another 15 minutes. Allow the peanuts to cool completely before serving.
