WILD RICE SALAD FOR DIABETICS OR
HEART PATIENTS
 
1 c. cooked wild rice or brown rice
1 c. diced celery
1 tsp. low fat yogurt
1 apple, seeded and chopped
1 c. seedless grapes
2 tbsp. light mayonnaise
2 tbsp. chopped dry peanuts

Combine all ingredients except peanuts. Toss to mix; cover and chill 3 hours and sprinkle peanuts on top. 4 servings.
