WILD RICE SALAD 
1 (6 oz.) UNCLE BEN'S® long grain and wild rice
1/4 c. onion
4 hard boiled eggs, chopped
1/2 c. celery
2 (16 oz.) cans kidney beans
1 c. pickle relish
1/2 tsp. pepper
1/2 tsp. salt
1/2 c. chopped green pepper
1/2 - 2/3 c. mayonnaise

Cook rice according to the directions. Cool. Add the remaining ingredients. Refrigerate until ready to serve. Serves 8.
