BUTTERMILK CHESS PIE 
pre-baked pie crust
3 eggs
1 1/2 c. sugar
2 tbsp. flour
dash salt
2 tbsp. butter, melted
1 c. buttermilk (or 1 tbsp. lemon juice or vinegar + enough milk to make 1 c.)
1 tsp. vanilla
powdered nutmeg

Beat eggs, sugar, flour and salt until completely blended. Add butter and buttermilk. Add vanilla and blend well. Pour into pie crust and sprinkle with nutmeg.

Bake at 325°F until done.
