WAIKAIKI CHICKEN 
2 1/2 to 3 lbs. chicken
1/2 c. flour
1 tsp. salt
1/4 tsp. pepper
1/2 c. cooking oil
1 green pepper
1 (4 oz.) can of crushed pineapple, drain, save juice

JUICE INGREDIENTS:

Pineapple juice
1 c. sugar
3/4 c. vinegar
1 tbsp. soy sauce
1 tsp. ginger
1 chicken bouillon cube

Pat chicken dry and place in bag with flour, salt, and pepper. Shake well and brown in hot oil. Drain and place in baking dish (skin side up). Cut green pepper and mix with pineapple. Add other juice ingredients and boil for two minutes. Pour juice over chicken and bake in preheated oven at 350 degrees. Bake 30 minutes then add pineapple and green pepper mixture. Bake 30 to 40 minutes or until chicken is done.
