CORN BREAD 
3/4 c. self-rising cornmeal
1 egg
1/2 c. buttermilk
1 tbsp. mayonnaise
1/2 tbsp. bacon grease or lard

Combine cornmeal, egg, buttermilk and mayonnaise to create batter. Put bacon grease into cold iron skillet and place in oven while oven is preheating to 450°F. Remove skillet and pour half the hot bacon grease into the corn bread batter and stir. Pour batter into hot skillet and bake for 20 minutes.
