VELVET ZUCCHINI SOUP 
2 med. zucchini
2 tbsp. butter
2 tbsp. onion, finely chopped
1 tsp. curry powder
1 clove garlic, minced
1/2 c. half and half
1 can (13 3/4 oz.) chicken broth

Saute zucchini, onion and garlic in butter 5 minutes. Add curry powder and simmer, covered, 15 minutes. Blend in blender. Add cream, broth and blend more. Top with grated cheese. Serves 4.
