HASH BROWN CASSEROLE 
2 lb. hash browns, shredded
1/2 medium onion
1 can cream of chicken soup
8 oz. sour cream

Topping:

1 stick melted butter
10 oz. shredded Colby cheese
salt and pepper

Mix together and pour in 9 x 13-inch casserole dish. Top with Ritz crackers and butter.

Bake at 350°F for 1 hour. This will feed a hungry bunch (15 to 20).
