CUT UP CHICKEN QUARTERS AND
SEASONED RICE
 
5 1/2 cups water
2 cups white rice
2 cans cream of mushroom soup
1 cup onions chopped
1 cup celery chopped
1/3 cup soy sauce
1/2 tsp. poultry seasoning
1/2 tsp. ground marjoram
1/2 tsp. oregano
1/2 tsp. celery salt
1 tsp. parsley flakes
1 tsp. chives
1 tsp. paprika
1 tsp. cilantro flakes
1 tsp. sweet basil flakes
3 to 4 chicken quarters, cut up
salt and pepper to taste or Lawry's seasoning

In a high side greased cake pan place all ingredients in the order listed and mix, except for chicken and salt and pepper. Then place a rack on top of cake pan and place chicken that has been sprayed with non-stick cooking spray (Pam) and lightly salted and peppered or Lawry's seasoning. Then place chicken on top of the rack.

Place in a preheated 350°F oven for 1 1/2 hours to 1 hour and 45 minutes, uncovered. The chicken becomes nice and crispy and the drippings flavor the rice beneath the chicken. Check doneness of rice after 1 1/2 hours.

P.S. You can used a oval roaster with a rack placed on top of it.
