WELSH RAREBIT 
3 tbsp. butter
1 pound cheddar cheese
1/2 cup stale beer
1/4 tsp. dry mustard
1/8 tsp. cayenne pepper
1 egg, beaten

Melt butter in top of double boiler. Add cheese cut into small pieces. When melted, slowly wisk in beer. Add spices and beaten egg very slowly. Great over toast points and/or asparagus.
