SWEET POTATO SOUFFLE 
4 c. sweet potatoes (boiled, baked or canned)
1 c. granulated sugar
1/4 lb. butter
2-3 eggs
1 tsp. cinnamon
1 tsp. vanilla
1 tbsp. lemon juice
1/4 - 1/2 c. canned evaporated milk
1/2 c. chopped pecans (opt.)
1/2 c. coconut

Mix all ingredients well with mixer. Pour into buttered casserole and bake at 350 degrees for 30 minutes or until lightly browned.

Variation: Potatoes may be topped with marshmallows or poured into unbaked pie shell.
