MEATLOAF 
1 1/2 lb. ground chuck
1/2 c. quick oatmeal
1/2 c. milk
1 slightly beaten egg
1/4 c. celery, cut fine
1/4 c. onion, fine
1 tsp. salt
1/8 tsp. pepper
1/2 c. Zesty tomato soup - no water

Soak crumbs in milk; add meat, egg, onion, celery and seasonings. Add soup. Mix well. Form in loaf pan. Cover with Piquant Sauce.

PIQUANT SAUCE:

3 tbsp. brown sugar
1/4 c. catsup
1 tsp. dry mustard
1/8 tsp. nutmeg
1/2 tsp. water

Combine and mix well. Bake 1 1/2 hours at 350 degrees.
