COLORFUL STIR CHICKEN 
2 chicken breasts, boned and skinned
1 tbsp. soy sauce and water (may add more)
1/2 tsp. ginger
1/4 c. salad oil
1 sm. onion, chopped
1 (4 oz.) can mushrooms
1/2 c. blanched almonds
1 (5 oz.) can sliced water chestnuts
1 (5 oz.) can sliced bamboo shoots
1/2 c. frozen peas

Cut chicken in strips. Brown with onion slightly in oil. Add soy, water and ginger. Simmer for about 10 minutes. Add rest of ingredients - cook another 10 minutes. May prefer more soy. Serves 4. Serve with rice and chow mein noodles.
