POTATO CANDY 
1 sm. potato (size of an egg)
1 (1 lb.) box powdered sugar (depends on size of potato used)
1/2 tsp. vanilla
1/4 tsp. red food color (optional)
Peanut butter, room temperature (amt. varies)

Cook potato and mash while hot, add coloring and vanilla and powdered sugar. Stir all together to make a dough that is firm as regular pie dough. Roll as pie dough and spread with the peanut butter. Then roll into a roll as jelly roll. Refrigerate. When cold, cut into small pieces. This is easy to make and is a real treat for children.
