FLUFFY POTATO CASSEROLE 
2 c. hot or cold mashed potatoes
1 (8 oz.) pkg. cream cheese at room temperature
1 sm. onion, finely chopped
1 (3 1/2 oz.) can French fried onions
2 eggs
2 tbsp. flour
Salt and pepper to taste

In large mixer bowl combine potatoes, cream cheese, chopped onions, eggs, flour, salt and pepper. Beat at medium speed until blended. Increase to high speed and beat until light and fluffy. Spoon into 9 inch square baking dish. Sprinkle French fried onions evenly over top. Bake at 300 degrees for 35 minutes. If prepared ahead of time, do not put French fried onions on top until just before putting in oven. Serves 6.
