POTATO CHIP COOKIES 
2 c. (4 sticks) butter, at room temperature
3 1/2 c. all-purpose flour
1 1/2 c. sugar
2 tsp. vanilla
3 oz. potato chips, crushed
Powdered sugar

Preheat oven to 350 degrees. Beat butter in medium bowl until light and fluffy. Gradually add flour, sugar and vanilla, mixing thoroughly. Blend in potato chips. Drop by teaspoons onto baking sheet, baking until golden, about 5 to 10 minutes.

Let cool on baking sheet, about 5 minutes. Sprinkle with powdered sugar. Transfer to wire rack and cool completely.
