BANANA MUFFINS 
2 c. flour
1/2 c. sugar
1/2 c. chopped nuts
1 tbsp. baking powder
1/2 tsp. each nutmeg and salt
1 lg. banana, diced
2 eggs
1/2 c. milk
1/2 c. butter, melted
Wheat germ for garnish

In large bowl, mix flour, sugar, nuts, baking powder, nutmeg, and salt. Add bananas; toss to coat. In small bowl, beat eggs with fork; beat in milk and butter. Add to flour mixture; stir until just blended. Fill greased muffin pans 2/3 full. Sprinkle tops with wheat germ. Bake at 400 degrees for 15-35 minutes, depending on size of pans. Can also be baked in 9 x 9 inch pan, 30-35 minutes, for coffee cake.
