PUMPKIN APPLE CAKE | |
1/2 c. butter (1 stick) 1 1/2 c. sugar 2 eggs 1 tsp. vanilla extract 2 med. apples, pared and diced (1 1/2 c.) 1 c. canned pumpkin 2 c. all-purpose flour 1 tsp. baking powder 3/4 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1/4 tsp. cloves 1/4 tsp. ginger Confectioners' sugar In a large mixing bowl, cream the butter; beat in sugar. Add the eggs, one at a time. Stir in vanilla, apples, and pumpkin. Blend in dry ingredients. Turn into a greased and floured 9 inch bundt or angel cake pan. Bake in a 350 degree oven for 55 to 60 minutes. Cool in the pan for 10 minutes, then turn out on a rack to cool. Sprinkle with confectioners' sugar when cool. Serves 16. |
