PASTA VERMICELLI SALAD 
1 lb. vermicelli
1 1/4 c. chopped celery
1/2 to 3/4 lg. jar chopped pimentos
Fresh parsley, chopped (enough for color)
1 can shrimp with juice
1 lg. grated onion
Salt to taste
3-4 hard boiled eggs, chopped
Black olives (optional
Mayonnaise

Cook vermicelli 5 minutes only until tender; drain, rinse well, and cool. Put it in large mixing bowl with celery, pimento, shrimp, parsley, onion, salt, mayonnaise, eggs (chopped), and black olives. Mix thoroughly. Make 1 day ahead. Refrigerate until serving. Stir before serving.
