SUMMER SQUASH CASSEROLE 
1 pkg. Pepperidge Farm stuffing mix
1 stick butter (butter)
2 to 3 summer squash
1 onion
1 sm. sour cream
1 can cream of mushroom soup
1/2 can milk
1/2 carrot, shredded

Boil squash and onion until soft, drain. Melt butter, mix with stuffing mix. Mix sour cream, soup, milk and carrot together. Add squash and onion. Layer stuffing-squash mixture in casserole (end with stuffing). Bake at 350 degrees for 25 to 30 minutes.
