CUCUMBER CHEESE BALL 
2 pkg. cream cheese, softened (low-fat is okay)
2 cucumbers*
chopped purple onion (according to how much onion you like)**
chopped red bell pepper to taste
2 large tbsp. mayo
dried chives to taste
Cavender's Greek seasoning to taste
salt and pepper to taste

*I prefer pickling (small) cucumbers because they taste better and don't have as many seeds; you can get them at Easyway. If you do use pickling cucumbers, it will take more than two because they are smaller.

**You may also use green onions or Vidalia; totally your preference.

Mix all ingredients, then make it into a ball. Slice one of the cucumbers thinly and place slices onto ball until it is covered. You may garnish the top with alfalfa sprouts, parsley or use a radish rosette. Serve with any type of crackers. BON APPETITE!
