ERIC'S FAVORITE - MOM MOM RUTH'S
QUICK CHEESE PIE
 
25-30 vanilla wafers
2 tbsp. butter
12 oz. (box + 1/2) cream cheese
2 eggs
2 tsp. vanilla
1 c. sugar
3/4 c. sour cream (lo cal if preferred)

Preheat oven to 350 degrees.

Crush all vanilla wafers and mix with 2 tablespoons melted butter. Press mixture into buttered pie pan and up sides also.

Mix with blender 12 ounces of cream cheese, 1/2 cup sugar and 1egg. After completely mixed add 1 more egg and 1 teaspoon vanilla. Bake 25 to 30 minutes. After pie cools, blend 3/4 cup sour cream, 1/2 cup sugar and 1 teaspoon vanilla. Spread on pie and bake 10 more minutes. Top when cool with cherries or any other topping.
