SINGLE CRUST PUMPKIN PIE 
2 c. stewed or canned pumpkin
3/4 c. granulated sugar
1/2 tsp. salt
1/4 tsp. ginger
1 tsp. cinnamon
1 tsp. vanilla
2 egg yolks
2 c. milk
2 egg whites, beaten stiff
Nutmeg
Butter

Mix ingredients in order given, folding in the egg whites at the very last. Pour into pie pan that has been lined with crust. Dot with butter and dash of nutmeg. Bake in hot oven 10 minutes. Reduce heat and bake until set or firm in the center. Test by inserting a knife blade in the center, if it comes out clean then the pie is done.
