RICE AND ARTICHOKE SALAD 
1 box Rice-A-Roni fried rice with almonds
1/2 c. chopped onion
1/2 c. chopped green pepper
1 sm. can black olives, chopped
1 (6 oz.) can marinated artichokes or jar
1/3 c. mayonnaise
3/4 tsp. curry powder (optional)

Cook rice according to package directions. Allow to cool in a large bowl. Add chopped onions, peppers, and olives. Drain artichokes, reserve the liquid. Chop artichokes, and add to the rice mixture. Add mayonnaise and artichoke liquid to the rice mixture, toss; chill.

Before serving, place on bed of lettuce leaves, and garnish with cherry tomatoes. This is very good.
