RICE PUDDING 
1/2 gal. milk
1/4 lb. butter
3/4 c. sugar
1 1/2 c. rice
1 egg
1/2 pt. heavy cream
1 tsp. vanilla
1 1/2 oz. Amaretto (optional)
Cinnamon
1/3 c. raisins (optional)

Boil raisins for 10 minutes, drain water and let cool. In a pot add milk, butter and sugar. Bring to a slow boil. Add rice and simmer and cook for 45 minutes. Stir often. Beat the egg, cream, vanilla and amaretto. Put rice mixture into a large serving dish and cool. Then add raisins and beaten mixture. Sprinkle cinnamon. Refrigerate.
