SWEET POTATO CAKE | |
1 1/2 c. cooking oil 2 c. sugar 4 eggs, separated 2 1/2 c. sifted cake flour 3 tsp. baking powder 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. vanilla 1 c. chopped nuts 4 tbsp. hot water 1 1/2 c. raw sweet potatoes, grated 1/4 tsp. salt Combine cooking oil and sugar. Beat until smooth. Add egg yolks. Beat well. Add hot water; then dry ingredients which have been sifted together. Stir in nuts, potatoes and vanilla. Beat well. Beat egg whites until stiff. Fold into mixture. Bake in three greased 8 inch or 9 inch cake pans for 25 to 30 minutes. Cool and frost. |
