SWEET POTATO POUND CAKE 
1 c. softened butter
2 c. sugar
4 eggs
2 1/2 c. cooked mashed sweet potatoes
3 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1 tsp. vanilla
1/2 c. coconut
1/2 c. pecans

Cream butter, add sugar; beat well. Add eggs one at a time, beat well after each. Add sweet potatoes; beat well. Combine flour, baking powder, soda, cinnamon, nutmeg, and salt. Gradually add potato mixture. Beat after each addition. Stir in vanilla, coconut, and pecans, spoon batter into a well greased 10 inch tube pan. Bake at 350 degrees for 1 hour and 15 minutes or until done. Cool in pan 15 minutes then remove from pan.
