STIR - FRIED ASPARAGUS 
2 tsp. sesame seeds
2 lb. fresh asparagus, cut on diagonal into 1" pieces
2 tbsp. peanut oil, or more as needed
2 tsp. grated fresh ginger
1/2 tsp. salt
1 tsp. light sesame oil

Plunge asparagus into a large pot of boiling salted water for 2-3 minutes; drain. Plunge them into a basin of icy water. When cool, drain completely and pat dry. Toast sesame seeds in a small pan set over medium heat. Stir constantly until light brown in color, about 2-3 minutes.

Immediately remove from heat and transfer sesame seeds to a dish. Dish can be done in advance to this point. In a large deep sided saute pan or wok, heat oil over medium heat. Add ginger, salt and asparagus and stir fry for 5 minutes or until heated through. Stir in the sesame oil and seeds and stir fry for another 30-45 seconds. Total cooking time is 6 minutes.

Serves 6-8.
