FISH ROE CAKES 
Use small or large can. Drain off water. Mash with fork. Add 1 egg, salt and pepper. Stir until well mixed. Add enough crushed Saltines until mixture will stay together when formed into a cake (should not feel soggy but stiff). Fry until brown in enough oil or bacon grease to cover bottom of pan. If grease dries up you should add a little to pan.
