FLAVORFUL FISH CAKES 
1/2 c. milk
1/2 c. onion, finely chopped
2 eggs, slightly beaten
1/2 tsp. salt
1 tsp. lemon juice
Parsley or water cress
1/2 c. Post Grapenut cereal
1 tbsp. shortening
2 cans tuna, drained & finely flaked
1/8 tsp. pepper
1 tbsp. shortening
Lemon wedges

Add cereal to milk; set aside. Meanwhile saute onions in shortening until tender, but not browned. Add to cereal mixture with tuna, eggs, salt, pepper and lemon juice. Stir to blend thoroughly. Form into 12 patties. Brown on both sides in remaining shortening. Garnish with parsley. Serve with lemon juice.
