2 (3 oz.) pkgs. cream cheese, softened 2 med. cucumbers, peeled, grated 1 sm. onion, grated 2 tbsp. mayonnaise Salt and pepper to taste Add cucumbers and onion to cream cheese with just enough juice to make good spreading consistency. Stir in mayonnaise, add salt and pepper. | |

This sandwich spread originated in KY and is called Benedictine spread. We tint the spread a very light green color. Also, be sure to remove all the cucumber seeds before mixing and drain well (cucumbers hold a lot of juice).
