RHUBARB PUDDING CAKE 
1 1/4 c. sugar
2 tbsp. butter
1 egg
1 tsp. vanilla
1/2 c. milk
1 1/4 c. flour
1 tbsp. baking powder

Mix sugar, butter, egg, vanilla and milk. Mix and add the flour and baking powder. Pour all of the above in a 9"x9" pan. Put 2 1/2 cups cut rhubarb on top. Pour 1 cup boiling water mixed with 1 cup sugar over the cake.

Bake at 350 degrees for approximately 1 hour or until brown on top. I double the recipe and bake in a 9"x13" pan.
