1 med. head cabbage (be sure leaves are not cracked) 1 lb. ground beef 1 lb. ground pork 1 c. rice 2/3 c. onions 2 tsp. salt 1/2 tsp. pepper 1 #2 can tomatoes, tomato paste or tomato sauce To prepare cabbage, cut deeply around core to loosen leaves. Boil about 5 minutes. Take leaves apart and trim the thick veins. Bring rice to boil and drain. Saute onions in a little butter. Mix together beef, pork, rice, onions and seasonings. Place a small amount of this mixture on each leaf and roll up. Press ends of leaf in toward center. Place some cabbage leaves or a small amount of sauerkraut on bottom of pot. Place rolls side by side in pan. Pour tomatoes over top and add enough water to cover. Pour about 2 teaspoons of salt over top, cover and cook slowly for about 1 1/2 hours. (Do not stir.) |
