BUTTERSCOTCH PIE 
1 c. brown sugar
1/3 c. flour
1/4 tsp. salt
2 c. scalded milk
3 slightly beaten egg yolks
3 tbsp. butter

Mix flour, sugar and salt. Gradually add to milk. Cook, stirring constantly until mixture thickens and boils. Add small amount to egg yolks. Stir into remaining mixture. Cook 1 minute, stirring constantly. Add butter. Pour into baked pie shell.

Makes a 9-inch pie.
