MIXED VEGETABLE CASSEROLE 
3 (10 oz.) pkg. frozen mixed vegetables
1 1/2 c. shredded Cheddar cheese
1 c. chopped celery
1 c. chopped onion
1 c. mayonnaise or salad dressing
1/2 tsp. pepper
1 1/2 c. crushed Ritz crackers
1/4 c. butter, softened

Cook vegetables according to package directions; drain. Combine with cheese, celery, onion, mayonnaise and pepper. Turn mixture into a 13 x 9 x 2 baking dish. Combine crackers and butter. Sprinkle over vegetable mixture.

Bake, uncovered, in a 350°F oven for 20 to 25 minutes or until heated through.

Makes 10 to 12 servings.
