REGAL CHICKEN SALAD 
2 - 1/2 c. cooked, diced and chilled chicken meat
1 c. chopped celery
1 c. seedless grapes, sliced
1/2 c. sliced almonds, toasted lightly
2 tbsp. chopped fresh parsley
1 tsp. salt
1 c. mayonnaise
1/4 c. heavy whipping cream
lettuce leaves
additional grapes for garnish

In a medium bowl, whip heavy cream to soft peaks. Combine chicken, celery, grapes, almonds, parsley, salt and mayonnaise with whipped cream, folding well. Chill. Just before serving, mound chicken salad in center of a pretty plate lined with fresh lettuce and garnish with more grapes.
