COMPANY SHRIMP CASSEROLE 
1/4 c. sliced celery
1/4 c. sliced scallions
1/4 c. melted butter
3 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper (seasoned if you have it)
2 c. milk or light cream
2 tbsp. diced pimento or red peppers
1 to 1 1/2 lbs. cooked shrimp (I use the larger cocktail variety)
Mashed potatoes to serve # of people you are serving (10 to 12 potatoes for 6 to 8 people), more if potatoes are small
1 c. shredded cheddar cheese

In medium saucepan, saute celery and onions in butter. Add flour, salt and pepper, cooking until bubbly. Gradually stir in milk to make a white sauce, cooking until thickened, stirring constantly. Stir in shrimp and pimento and remove from heat. Line well buttered baking dish with mashed potatoes. Pour sauce mixture in center. Top with cheese. Bake at 375 degrees for 25 to 30 minutes. 6 to 8 servings.
