FAVORITE MEAT LOAF 
1 beef bouillon cube
1/2 c. boiling water
2 slices bread, crumbled fine
1 1/2 lb. 85% lean ground round
2 med. eggs, beaten slightly 1
1/2 c. finely chopped onion
1/4 c. finely chopped celery
2 tsp. Worcestershire sauce
1 tbsp. catsup

Preheat oven to 350 degrees. Line a shallow 8 inch baking pan with foil. Dissolve beef bouillon cube in boiling water in a large bowl. Add all other ingredients except the catsup and blend well with a fork.

Turn onto foil in pan and with hands, shape quickly into a 6 x 4 1/2 x 2 inch loaf. With the dull edge of a knife make a cross-cross pattern across the top; spread catsup on top.

Cover loaf with a tent of foil that does not touch the top. Bake for 45 minutes. Remove from oven and cool in pan for 2-3 minutes before serving. Using this molded method instead of loaf pans allows the fat to drain from the loaf, whereas a loaf pan retains the fat. 6-8 servings.

One serving: 1 large slice (4 1/2 x 2 x 1 inch) - calories 267.

One serving: 1 medium slice (4 1/2 x 2 x 3/4 inch) - calories 189.

Special Note: For low sodium diet use low sodium bouillon cube.
