PAPA JIM'S MEATLOAF 
2 lb. ground beef
1 tsp. garlic powder
salt and pepper, to taste
1 (4 oz.) can chopped green chiles
1 (4 oz.) can mushrooms, reserve liquid
2 eggs
8 to 10 saltine crackers, crushed
1 small onion, chopped
2/3 cup ketchup (Hunts)
3 slices bacon

In small bowl, mix together ketchup and reserved liquid from mushrooms and set aside.

In large bowl, mix together ground beef, spices, green chiles, mushrooms, eggs, crushed crackers and onion. Mix thoroughly (using your hands is easiest).

Form into a loaf and put in large loaf pan. Lay bacon slices on top of loaf. Pour ketchup mixture on top of bacon.

Tip: You may use the new pans that have holes to drain fat from the pan.

Bake in 325°F oven for 50 minutes.

Serves 8.

This is my step-dad's recipe! It was published in two local cookbook fundraisers for school libraries here in Albuquerque, New Mexico :) The green chiles add flavor, not heat. My favorite meatloaf recipe!
