CHOCOLATE PECAN PIE | |
akes two pies. 1 stick melted butter 1 1/2 c. brown sugar 1 1/4 c. light corn syrup 5 eggs 1 1/2 tsp. vanilla 1 tbsp. rum 2 (9") pie shells (Pet Ritz shells do great) 1 1/2 c. chocolate chips 2 c. pecan halves Cream butter and sugar with electric mixer. Gradually add corn syrup. Beat in eggs, one at a time. Add vanilla and rum. Sprinkle each pie shell with 3/4 cup of chocolate chips and 1 cup of pecans. Pour in filling. Bake at 350 degrees until well set, about 40 to 50 minutes. HINTS: Brush pie shells with egg white before adding the chips and pecans. After pies have baked 30 minutes, cover edge of pie crust with foil to keep from getting too dark. |
