HOMINY CASSEROLE 
1 stick butter
1 onion, chopped
1 green pepper, chopped
4 cans hominy, drained
1 sm. can chopped mushrooms
1 sm. can chopped ripe olives
1 sm. jar pimentos
8 to 10 oz. Velveeta cheese, grated
1/4 c. Parmesan cheese

Saute onions and peppers in melted butter. Stir in remaining ingredients. Pour into a greased casserole dish. Bake at 350 degrees until hot and bubbly through.
