CHOCOLATE COVERED CHERRY CAKE 
CAKE:

1 box devil's food cake mix
1 can cherry pie filling
3 eggs
1 tsp. almond extract

ICING:

1 c. sugar
5 tbsp. butter
1/3 c. evaporated milk
6 oz. pkg. chocolate chips

Put dry cake mix into a bowl. Smooth out lumps before adding other ingredients. Add eggs, pie filling and almond extract. Mix by hand until blended. Pour into prepared cake pan. Bake at 350 degrees for 25 minutes. Test for doneness with a cake tester. Bake more if necessary.

ICING: In a saucepan mix sugar, milk and butter until blended over heat. Add melted chocolate chips to above mixture. Stir well. Let icing cool some before putting on cake. (TIP: Melt chocolate chips in microwave.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
