TUNA PATTY SURPRISE 
2 cans (6 1/8 oz.) tuna in water
1 c. crushed saltine crackers
2 tbsp. chopped onion
1 tbsp. butter, melted
1/2 c. milk
1 egg
3 tbsp. cooking oil
Surprise Sauce

Mix tuna, crackers, onion, butter, milk and egg together in a bowl. Form mixture into patties. Thoroughly brown on both sides in a skillet in oil.

SURPRISE SAUCE:

Cook 2 tablespoons chopped onion in 3 tablespoons butter until tender, but not brown. Blend in: 1 tsp. mustard 1/2 tsp. salt Dash of pepper

Add 1 1/4 cups milk and 1 teaspoon Worcestershire sauce. Cook, stirring constantly, until sauce thickens and bubbles. Serve Surprise Sauce over cooked patties for a delicious taste surprise - no tuna taste.
