SPICY MEXICAN RICE 
Vegetable cooking spray
1 tsp. vegetable oil
1/2 c. uncooked long grain rice
1/2 c. chopped onion
1 c. chopped tomato
1/3 c. chopped green pepper
1/4 tsp. garlic powder
1/4 tsp. ground red pepper
1/2 tsp. chili powder
1 tsp. beef flavored bouillon granules
1 to 1 1/4 c. water

Coat a large skillet with cooking spray; add oil and place over medium heat. Add rice and onion; saute about 3 minutes, stirring occasionally. Add remaining ingredients; bring to a boil. Cover, reduce heat and simmer 25 minutes or until tender. Yields 5 servings.
