CREOLE CHICKEN 
6 boneless chicken breasts
1/2 c. chopped onion
1/2 c. chopped green pepper
1/4 c. finely chopped parsley
2 tsp. minced garlic
1/4 c. vegetable oil
1 tbsp. chili powder
1 tsp. cayenne pepper
1/2 tsp. ground cumin
2 (16 oz.) cans tomatoes

Saute pepper, parsley, onion, and garlic in vegetable oil. Add tomatoes, chili powder, cayenne pepper and cumin. Stir and bring to a boil. Add chicken and simmer for 1 hour. Serve with rice.
