CRUMB TOP CHOCO - PEANUT BUTTER

1 (6 oz.) pkg. semi-sweet chocolate pieces (1 c.)
1 c. brown sugar, packed
2/3 c. creamy peanut butter
1/2 c. butter, softened
1 egg
1 tsp. vanilla
1 1/2 c. all-purpose flour, sifted
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. quick-cooking rolled oats

Preheat oven to 350 degrees. Place chocolate pieces in top of double boiler. Heat over boiling water until chocolate melts (water in bottom of double boiler should not touch the top of pan). Set aside.

In mixing bowl, cream together brown sugar, peanut butter and butter. Add egg and vanilla and beat well. Stir together flour, baking soda and salt, and add to creamed mixture. Beat just until well mixed. Stir in oats.

Spread 3/4 of dough in a greased 13x9x2" baking pan. Spread with the melted chocolate. Dot chocolate layer with the remaining 1/4 of dough. Bake at 350 degrees for 25 minutes. Cool and cut into bars. Makes about 2 dozen bars.
